Alternative Assignment for Men's and Women's Choir

I'm in a rural school district that has just one High School choir. I plan on programming a piece for a Men's Choir and a Women's Choir, and I'd like to give an assignment to each group to work on while the other is rehearsing. Ideally, it would be something that would take more than a few weeks to complete, wouldn't require much guidance from me (since I'll be rehearsing), and would enhance the curriculum. Any ideas?

If you have just one student who would like to accept yhe challenge of conducting a piece, that would solve your dilemma. I have used this method nu,erous times with my college groups.

I've got a piece called "Go" for TB a cappella choir that might be fun for the guys to put together. Here's a link to the score and perusal pdf. The musical material is fairly straight forward, but there's an added hand clap and/or drum part that challenges their rhythm in a fun way.
